VGCC Schedules Class on Healthy Vegetarian Eating

Vance-Granville Community College is offering a hands-on course in vegetarian cooking, starting Oct. 18 and concluding Dec. 13. Classes will be held on Thursday evenings from 6:30 until 9:30 p.m. at the Masonic Home for Children in Oxford.

Instructor Kim Campbell of Oxford, who studied nutrition and child development at Cornell University, will explore the essentials of vegetarian, or plant-based, cooking while also offering some information on health and nutrition. She said she will provide students with “uncomplicated, tasty recipes” as well as food history and lore, while also debunking myths about plant-based eating.

“This is not just a demonstration class,” Campbell said, since students will take part in cooking and enjoying food prepared during class. Students will leave with an understanding of how to prepare delicious and satisfying vegetarian and vegan meals, using common foods such as whole grains, legumes and tofu. The eight classes will focus on particular types of cuisine, such as soups, appetizers, salads and sandwiches.

The cost of the course is $40.
